Golden Fried Rice with Vegetables

Ingredients
  

2 cups cooked jasmine rice (preferably day-old for best texture)

1 cup mixed vegetables (peas, carrots, bell peppers, corn)

2 tablespoons vegetable oil (or sesame oil for added flavor)

3 cloves garlic, minced

1 small onion, finely chopped

2 eggs, beaten

3 tablespoons soy sauce (low sodium)

1 tablespoon oyster sauce (optional)

Salt and black pepper to taste

2 green onions, chopped

1 teaspoon sesame seeds (for garnish)

Fresh cilantro leaves for garnish (optional)

Prep the Rice: If using freshly cooked rice, spread it out on a plate to cool slightly. Day-old rice works best as it will be drier and won’t clump together.

    Heat the Oil: In a large wok or non-stick skillet, heat the vegetable oil over medium-high heat until shimmering.

      Sauté Aromatics: Add the chopped onion and garlic to the pan, stirring frequently. Fry for about 2-3 minutes until the onion becomes translucent and fragrant.

        Cook Vegetables: Toss in the mixed vegetables and continue to stir-fry for another 3-4 minutes until they are warmed through and slightly tender.

          Scramble the Eggs: Push the vegetable mixture to one side of the pan and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them into the vegetable mixture.

            Add Rice: Add the cooked jasmine rice to the skillet. Break up any clumps and stir well to combine the rice with the vegetable and egg mixture.

              Seasoning: Pour the soy sauce and oyster sauce (if using) evenly over the rice. Stir everything together for about 2-3 minutes until the rice is heated through and the flavors have melded. Season with salt and black pepper to taste.

                Garnish and Serve: Remove the fried rice from heat, and sprinkle chopped green onions and sesame seeds over the top. For an optional fresh touch, garnish with cilantro leaves.

                  Enjoy: Serve hot as a standalone dish or as a side with your favorite protein.
