1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

3/4 cup milk (choose buttermilk for extra fluffiness)

2 tablespoons melted butter (plus more for cooking)

1 teaspoon vanilla extract

Optional: 1/2 cup chocolate chips or fresh berries

For serving: Maple syrup, whipped cream, or fresh fruit

Prepare the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until combined.

    Combine Wet Ingredients: In another bowl, beat the egg. Then add the milk, melted butter, and vanilla extract. Mix until well combined.

      Mix Wet and Dry: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; some lumps are perfectly fine. If desired, fold in chocolate chips or berries at this stage.

        Heat the Pan: Place a non-stick skillet or a griddle over medium heat, and add a small amount of butter to coat the surface.
