Garlic Herb Chicken Orzo Skillet

1 lb boneless, skinless chicken breasts, diced

1 cup orzo pasta

2 cups chicken broth

1 medium onion, chopped

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach, chopped

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Juice of 1 lemon

Sauté Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the diced chicken with salt and pepper, then add it to the skillet. Cook for 5-7 minutes or until browned and cooked through. Remove chicken from the skillet and set aside.

    Cook Aromatics: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and cook for 3 minutes until translucent. Then, add the minced garlic and cook for another 1-2 minutes until fragrant.

      Add Orzo & Broth: Stir in the orzo pasta, dried oregano, dried thyme, and red pepper flakes (if using). Pour in the chicken broth, and stir to combine. Bring the mixture to a boil.

        Simmer: Once boiling, reduce the heat to low, cover the skillet, and let it simmer for about 10-12 minutes, stirring occasionally until the orzo is tender and has absorbed most of the liquid.

          Combine Ingredients: Add the cooked chicken back into the skillet along with the halved cherry tomatoes and chopped spinach. Stir gently to combine and allow the spinach to wilt, about 2-3 minutes.

            Finishing Touches: Squeeze fresh lemon juice over the skillet and mix well. Taste and adjust seasoning with more salt and pepper if needed.
