4 tilapia fillets

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

1 cup basmati rice

2 cups vegetable or chicken broth

Zest of 1 lemon

Juice of 1 lemon

1 tablespoon olive oil

½ teaspoon turmeric (optional, for color)

Prepare the Rice: In a medium saucepan, heat the olive oil over medium heat. Add the basmati rice and sauté for about 2 minutes until slightly toasted. Stir in the vegetable or chicken broth, lemon zest, lemon juice, and turmeric (if using). Bring to a boil, then reduce the heat to low and cover. Cook for 15 minutes or until the rice is tender and fluffy. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

    Cook the Tilapia: While the rice is cooking, season the tilapia fillets with salt, pepper, and paprika. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds, being careful not to burn it.

      Sear the Fish: Gently place the seasoned tilapia fillets into the skillet. Cook for 3-4 minutes on each side, or until the fish flakes easily with a fork and is golden brown. Remove the tilapia from the skillet and set aside on a plate.

        Make the Garlic Butter Sauce: In the same skillet, reduce the heat to low and add the remaining 2 tablespoons of butter to melt. Drizzle in more garlic if desired, and let simmer (do not let the butter brown).
