Instructions

Preheat the Oven:

Preheat your oven to 425°F (220°C).

      Prepare the Potatoes:

In a large bowl, combine the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper. Toss until the potatoes are evenly coated.

          Roast the Potatoes:

Spread the seasoned potatoes in a single layer on a baking sheet. Roast in the preheated oven for 20-25 minutes, or until golden brown and tender, flipping halfway through for even cooking.

              Prepare the Garlic Butter:

In a medium saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic. Stir in the lemon juice and fresh thyme, then remove from heat.

                  Cook the Cod:

While the potatoes are roasting, season the cod fillets with salt and pepper on both sides. In a large skillet, heat a drizzle of olive oil over medium-high heat. Add the cod fillets to the skillet and cook for about 3-4 minutes on each side, or until golden brown and the fish flakes easily with a fork.

                      Combine with Garlic Butter:

Once the cod is cooked, pour the prepared garlic butter over the fillets in the skillet, allowing the flavors to meld for about 1 minute.

                          Serve:

On a plate, serve the cod fillets alongside the roasted potatoes. Drizzle some extra garlic butter over the potatoes if desired, and garnish both with fresh parsley. Serve with lemon wedges on the side for an added fresh zing.
