Ingredients

2 cups fresh raspberries

1 cup plain Greek yogurt

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 tablespoon lemon juice

Pinch of salt

Optional: Coconut flakes or crushed nuts for topping

Instructions

Prepare the Raspberries: Rinse the fresh raspberries under cold water and gently pat them dry with a paper towel. Set aside a handful of raspberries for decoration.

Make the Yogurt Mixture: In a medium-sized mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Stir until well mixed and creamy. Adjust sweetness to your liking.

Combine the Ingredients: Gently fold the majority of the fresh raspberries into the yogurt mixture, being careful not to crush them.

Fill the Molds: Spoon the raspberry yogurt mixture into silicone molds or an ice cube tray. Press down lightly to pack them in but leave some raspberry pieces slightly visible.

Top it Off: For added texture, sprinkle some coconut flakes or crushed nuts on top if desired.

Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely solid.

Serve: Once frozen, carefully remove the yogurt bites from the molds. Arrange them on a serving plate and garnish with the reserved fresh raspberries.

Enjoy: These delightful frozen yogurt raspberry bites are perfect for a refreshing dessert or snack. Enjoy immediately!
