Ingredients

1 cup creamy peanut butter

1 cup plain Greek yogurt (or any yogurt of your choice)

1 cup strawberry or grape jam/preserve

1 tablespoon honey or maple syrup (optional, for sweetness)

1/2 teaspoon vanilla extract

1/2 cup granola (optional, for added crunch)

Mini cupcake liners

Instructions

Prepare the Cup Liners: Line a cupcake or muffin tin with mini cupcake liners to hold the cups. Set aside.

Make the Yogurt Mixture: In a medium bowl, mix the Greek yogurt, honey (if using), and vanilla extract until smooth and well combined.

Layering: Using a spoon, add a layer of yogurt mixture to the bottom of each cupcake liner, filling each about 1/3 full.

Add Peanut Butter: Next, carefully spoon a layer of peanut butter on top of the yogurt layer, filling about another 1/3 of the liner.

Top with Jam: Spoon a layer of strawberry or grape jam over the peanut butter layer, filling the cups to just below the top. Aim for a light swirl effect for visual appeal.

Final Yogurt Layer: Top each cup with a final layer of the yogurt mixture until they are almost full. Smooth out the tops using a spoon.

Add Granola (Optional): If desired, sprinkle granola on top for added texture and crunch.

Freeze: Place the muffin tin in the freezer and freeze for at least 2-3 hours, or until completely solid.

Serve: Once frozen solid, remove the cups from the liners. You can enjoy them immediately or store them in an airtight container in the freezer for up to 2 weeks.

Prep Time: 15 minutes | Total Time: 3 hours 15 minutes (including freezing) | Servings: 12 mini cups
