1 teaspoon vanilla extract

1 tablespoon lemon juice

1/2 cup fruit jam (strawberry, raspberry, or your choice)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang to make removing the bars easier.

    Make the Oatmeal Base: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, cinnamon, and salt. Stir well to mix all dry ingredients. Add the melted coconut oil, honey (or maple syrup), and vanilla extract. Mix until everything is combined and the mixture holds together when pressed.

      Bake the Oatmeal Base: Press the oatmeal mixture evenly into the prepared baking dish and smooth the top with the back of a spatula. Bake in the preheated oven for about 15-20 minutes or until lightly golden. Let it cool completely in the pan.

        Prepare the Yogurt Filling: In a mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice until smooth. If using, gently fold in fresh fruit.
