Ingredients

2 cups plain Greek yogurt

1 cup brewed coffee, cooled

1/3 cup unsweetened cocoa powder

1/4 cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/2 cup almond butter

1/2 cup dark chocolate chips (dairy-free if preferred)

1/2 cup chopped almonds

Pinch of sea salt

Optional toppings: whipped cream, crushed almonds, cocoa nibs

Instructions

Prepare the Coffee: Brew your coffee and allow it to cool to room temperature. You can speed this up by placing it in the refrigerator.

Mix Yogurt Base: In a large mixing bowl, combine the Greek yogurt, cooled coffee, cocoa powder, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

Fold in Almond Butter: Add the almond butter into the yogurt mixture and stir gently until fully combined and creamy. Ensure there are no lumps of almond butter.

Add Chocolate Chips and Almonds: Fold in the dark chocolate chips and chopped almonds. This adds delightful texture and flavor to your frozen cups.

Prepare the Cups: Line a muffin tin with cupcake liners, or use silicone muffin molds for easier removal. Spoon the yogurt mixture into each cup, filling them about ¾ full.

Freeze: Place the muffin tin in the freezer and let the cups freeze for a minimum of 4 hours, or until completely solid.

Serve: Once frozen, remove the cups from the muffin tin. If using paper liners, gently peel them away. You can serve them as is or top with a dollop of whipped cream, a sprinkle of crushed almonds, or cocoa nibs for extra flair.

Storage: Store any leftovers in an airtight container in the freezer for up to 2 weeks. Let them sit at room temperature for a few minutes before eating for an easier texture.
