1½ cups plain Greek yogurt

½ cup coconut milk (canned for creaminess)

1 cup brewed coffee (cooled)

⅓ cup unsweetened cocoa powder

¼ cup honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Pinch of sea salt

½ cup shredded coconut (unsweetened)

Optional: Dark chocolate shavings for topping

Instructions
 

Prepare the Coffee: Brew your coffee and allow it to cool completely. This can be done ahead of time for convenience.

    Mix the Base: In a medium bowl, whisk together the Greek yogurt, coconut milk, cooled coffee, cocoa powder, honey (or maple syrup), vanilla extract, and a pinch of sea salt until smooth. Ensure there are no lumps from the cocoa powder.

      Add Coconut: Fold in the shredded coconut gently, mixing just until evenly distributed.

        Fill the Molds: Pour the mixture evenly into ice cube trays or silicone molds. Tap the trays gently on the counter to eliminate any air bubbles and ensure even filling.

          Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours, or until completely solid.
