2 cups plain Greek yogurt

1 cup coconut milk (canned or cartoned)

1/2 cup honey or maple syrup (for a vegan option)

1 teaspoon vanilla extract

1/4 cup unsweetened shredded coconut

1/4 cup chia seeds

1/4 teaspoon sea salt

Optional toppings: fresh berries, more shredded coconut, sliced almonds, or chocolate chips

Prepare the Chia Mixture: In a medium bowl, combine the chia seeds with 1/2 cup of coconut milk. Mix well and let it sit for about 15 minutes until the mixture thickens and the chia seeds expand.

    Blend the Yogurt Base: In a separate large mixing bowl, combine the Greek yogurt, remaining coconut milk, honey (or maple syrup), vanilla extract, and sea salt. Whisk together until smooth and well incorporated.

      Combine Ingredients: Once the chia mixture is thickened, fold it into the yogurt mixture. Add the unsweetened shredded coconut and gently mix until evenly distributed.

        Line the Pan: Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

          Pour and Spread: Pour the yogurt chia mixture into the prepared pan, using a spatula to spread it evenly into the corners.
