Frozen Yogurt Coconut Almond Bites

Ingredients
  

2 cups Greek yogurt (plain or vanilla)

1/2 cup unsweetened shredded coconut

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup (for a vegan option)

1/4 teaspoon vanilla extract

A pinch of salt

1 cup chopped raw almonds

Optional: Fresh fruit pieces (like diced strawberries or bananas) for added flavor

Instructions
 

Prepare the Yogurt Mixture:

    In a large mixing bowl, combine Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Stir until the mixture is smooth and the honey/maple syrup is fully incorporated.

      Add Coconut and Almonds:

        Fold in the shredded coconut and half of the chopped raw almonds into the yogurt mixture. If you wish to include fresh fruit, gently fold those in at this stage.

          Create the Bites:

            Prepare a silicone mold or ice cube tray. Spoon the yogurt mixture into the molds, filling them to the top. Tap the mold on the counter to eliminate any air bubbles.

              Top with Almonds:

                Sprinkle the remaining chopped almonds evenly over the top of each filled mold, pressing them gently into the yogurt mixture.

                  Freeze:

                    Place the filled molds in the freezer and let the bites freeze for at least 4-6 hours, or until they are completely solid.

                      Release and Serve:

                        Once frozen, carefully pop the yogurt bites out of the molds. Serve immediately or store in an airtight container in the freezer for later enjoyment.

                          Garnish (Optional):

                            If desired, you can dip each bite in melted dark chocolate or drizzle some over them for an added treat before refreezing them.
