Frozen Yogurt Cereal Bar Energy Pops

Ingredients
  

2 cups plain Greek yogurt

1 cup granola (your choice of flavor)

1 cup mixed berries (fresh or frozen - strawberries, blueberries, raspberries)

1 ripe banana, sliced

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

Pinch of sea salt

Non-stick cooking spray or cupcake liners (for molds)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of sea salt. Mix well until the ingredients are thoroughly blended and smooth.

    Incorporate the Granola: Gently fold in the granola, being careful not to crush it too much. This will provide a nice crunch to your energy pops.

      Layer the Mixture: If using silicone molds or a cupcake tray, spray the insides with non-stick cooking spray or line them with cupcake liners. Start by adding a spoonful of the yogurt mixture to each mold or liner, filling them halfway.

        Add Fruit Layers: Place a few slices of banana and a mix of berries on top of the yogurt base layer. You can alternate layers by adding more yogurt mixture on top of the fruit if desired.

          Freeze: After layering the fruit, pour the remaining yogurt mixture over the top until the molds are nearly full. Gently tap the molds on the counter to eliminate any air bubbles. Cover with plastic wrap and insert popsicle sticks if using larger molds.

            Chill: Place the molds in the freezer for about 4-6 hours or until completely frozen.

              Serve: Once fully frozen, remove the pops from the molds. If they're difficult to remove, you can run them under warm water for a few seconds to loosen them. Enjoy immediately or store in an airtight container in the freezer for up to 2 weeks.
