Ingredients

3 ripe bananas, mashed

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/2 cup sugar (or honey, for a healthier option)

1 large egg

1/4 cup vegetable oil or melted coconut oil

1 teaspoon vanilla extract

1/2 cup Greek yogurt (vanilla or plain)

1/2 cup chopped nuts (walnuts or pecans, optional)

1/2 cup chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan with cooking spray or line it with parchment paper for easy removal.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon. Set aside.

Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas, sugar (or honey), egg, oil, vanilla extract, and Greek yogurt. Mix well until smooth and creamy.

Combine Wet and Dry Mixtures: Gradually add the dry mixture to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay. If desired, fold in the chopped nuts and chocolate chips.

Bake the Bread: Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Slice and Freeze: Once completely cool, slice the banana bread into even slices. Arrange the slices on a parchment-lined baking sheet and place them in the freezer for about 1 hour, or until frozen solid.

Prepare Frozen Yogurt Topping: While the slices are freezing, prepare a frozen yogurt topping by mixing 1 cup of your favorite Greek yogurt with 1 tablespoon of honey or maple syrup. You can also add a pinch of cinnamon for extra flavor.

Top and Refreeze: When the banana bread slices are firmly frozen, take them out and spread a dollop of the prepared frozen yogurt on top of each slice. Return them to the freezer until the yogurt is set, about 30 minutes.

Serve: Once the yogurt is set, your Frozen Yogurt Banana Bread Slices are ready to enjoy! Serve them directly from the freezer for a refreshing and delicious treat.
