Ingredients

2 cups fresh strawberries, hulled and halved

2 ripe kiwis, peeled and chopped

1 cup Greek yogurt (vanilla or plain)

1/4 cup honey or agave syrup (adjust based on sweetness preference)

1/2 cup coconut milk (or regular milk)

1 teaspoon vanilla extract

1/2 cup ice cubes (optional, for a frostier texture)

Instructions

Prepare the Fruit: In a blender, add the halved strawberries and chopped kiwis. Blend until smooth. You can pulse it if you want to retain some small pieces for texture.

Mix the Base: In a separate bowl, combine Greek yogurt, honey (or agave syrup), coconut milk, and vanilla extract. Stir until well mixed and creamy.

Combine: Pour the blended fruit mixture into the bowl with the yogurt mix. Gently fold the mixture with a spatula until everything is well combined. If you want a marbled effect, do not fully mix the fruit puree into the yogurt base.

Pour into Molds: Carefully pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion as they freeze. If you have leftover fruit puree, you can swirl it in on top for a decorative touch.

Insert Sticks: If your molds don’t have built-in sticks, insert wooden popsicle sticks into the center of each mold.

Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely set.

Unmold and Serve: To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out. Serve immediately and enjoy a refreshing treat!
