Frozen Strawberry Kiwi Popsicles

2 cups fresh strawberries, hulled and halved

2 ripe kiwis, peeled and chopped

1 cup coconut water (or water for a lighter option)

2 tablespoons honey or agave syrup (adjust to taste)

1 tablespoon lime juice (freshly squeezed)

A pinch of sea salt (optional)

Instructions
 

Blend the Strawberries: In a blender, combine the fresh strawberries, coconut water, honey, lime juice, and a pinch of sea salt. Blend until smooth. Taste the mixture and adjust sweetness if needed. Pour the blended mixture into a bowl and set aside.

    Prepare the Kiwi Layer: In the same blender, puree the chopped kiwis with a splash of water or coconut water to help it blend smoothly. You want a slightly chunky texture for added visual appeal. Set this mixture aside.

      Layer the Popsicles: Take your popsicle molds and pour the strawberry mixture into each mold, filling them about halfway. Tap the molds gently on the counter so any air bubbles rise to the surface.

        Add Kiwi Layer: Carefully spoon the kiwi mixture on top of the strawberry layer in each mold. The kiwi layer will float on the strawberry layer, creating a beautiful two-toned effect. Use a skewer or a popsicle stick to swirl them together slightly for a marbled look.

          Insert Sticks: If your molds have sticks, insert them at this stage. If not, simply cover the molds with a piece of aluminum foil or plastic wrap before placing them in the freezer.

            Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until solid.

              Release the Popsicles: To remove the popsicles from the molds, run warm water over the outside of the mold for a few seconds or gently twist the molds to release.
