2 cups fresh or frozen raspberries

2 tablespoons honey or maple syrup (adjust to taste)

2 cups Greek yogurt (plain or vanilla)

1 teaspoon vanilla extract

A pinch of salt

Optional: fresh mint leaves for garnish

Prepare the Raspberry Puree: In a medium saucepan over medium heat, combine the raspberries and honey (or maple syrup). Cook for about 5-7 minutes, stirring occasionally, until the raspberries have broken down and released their juices. Remove from heat and let it cool slightly. For a smoother consistency, you can blend the mixture, then strain it to remove the seeds if desired.

    Make the Yogurt Base: In a separate bowl, mix the Greek yogurt, vanilla extract, and a pinch of salt until well combined.

      Layer the Pops: Take your popsicle molds and start by spooning a layer of the yogurt mixture into the bottom of each mold, filling them about one-third full. Then add a spoonful of the raspberry puree on top. Use a toothpick or skewer to swirl the raspberry puree into the yogurt for a marbled effect. Repeat the layering process until the molds are full, finishing with a dollop of raspberry puree on top.

        Insert Sticks and Freeze: Place the popsicle sticks into the molds and freeze for at least 4-6 hours, or until fully solid.

          Unmold and Serve: To release the pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and serve immediately. Garnish with fresh mint leaves if desired. Enjoy your refreshing treat!
