Frozen Peach Coconut Yogurt Pops

2 cups ripe peaches, peeled and diced (fresh or frozen)

1 cup coconut yogurt (dairy-free or regular)

1/2 cup coconut milk (light or full-fat for creaminess)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon fresh lime juice

A pinch of sea salt

Optional: shredded coconut or chopped nuts for garnish

Instructions
 

Prepare the Peaches: If using fresh peaches, peel and dice them into small pieces. If using frozen peaches, allow them to thaw slightly for easier blending.

    Blend the Mixture: In a blender or food processor, combine the diced peaches, coconut yogurt, coconut milk, honey (or maple syrup), vanilla extract, lime juice, and a pinch of sea salt. Blend until smooth and creamy. Taste the mixture and adjust sweetness if necessary.

      Fill the Molds: Pour the peach coconut yogurt mixture into popsicle molds, leaving a small space at the top for expansion during freezing. If desired, sprinkle shredded coconut or chopped nuts on top for added texture.

        Insert Sticks: Place the popsicle sticks into the molds, ensuring they are centered and upright.

          Freeze: Transfer the molds to the freezer and freeze for at least 4-6 hours, or until completely solid.

            Remove from Molds: When ready to serve, remove the pops from the molds by running warm water over the outside of the molds for a few seconds, if necessary. Gently pull on the sticks to release the pops.
