2 cups mixed frozen berries (strawberries, blueberries, raspberries)

1 cup Greek yogurt (vanilla or plain)

1 ½ cups granola (your choice of flavors)

2 tablespoons honey or maple syrup

¼ teaspoon vanilla extract (optional)

Fresh mint leaves for garnish (optional)

Prepare the Fruit: If using larger frozen berries, chop the strawberries into smaller pieces. Allow the mixed berries to sit at room temperature for about 10 minutes to soften slightly.

    Mix the Yogurt: In a medium bowl, combine Greek yogurt, honey (or maple syrup), and vanilla extract (if using). Mix well until the ingredients are thoroughly blended.

      Assemble the Cups:

        - Take small cups or muffin tins (silicone works best for easy removal).

          - Start by placing a layer of granola at the bottom of each cup, about 2 tablespoons worth.

            - Next, add a layer of the yogurt mixture, filling about half the cup.

              - Add a layer of mixed berries, distributing evenly among the cups.

                - Top with another layer of yogurt, and finish off with a final sprinkle of granola for a crunchy finish.

                  Freeze: Place the assembled snack cups in the freezer for at least 2-3 hours or until fully set.

                    Serve: Once frozen, remove the cups from the freezer. If using a muffin tin, gently pull on the sides of each cup to release.

                      - Serve as is, or let them thaw for a few minutes for easier eating. Garnish with fresh mint leaves if desired.
