Frozen Blueberry Yogurt Pops

2 cups fresh or frozen blueberries

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (adjust sweetness to taste)

1 tablespoon lemon juice

1/2 teaspoon vanilla extract (optional)

A pinch of salt

Optional toppings: additional blueberries, granola, or chopped nuts

Instructions
 

Prep the Blueberries: If using fresh blueberries, rinse them under cold water. If using frozen blueberries, there’s no need to thaw them completely—just break them apart gently.

    Blend the Mixture: In a blender, add the blueberries, Greek yogurt, honey or maple syrup, lemon juice, vanilla extract (if using), and a pinch of salt. Blend on high until the mixture is smooth, leaving some chunks of blueberries for texture if desired.

      Taste and Adjust: Taste the mixture and adjust sweetness by adding more honey or maple syrup if necessary, then blend again until combined.

        Fill Your Molds: Pour the blueberry yogurt mixture into ice pop molds, filling them about 3/4 full to allow for expansion as they freeze. If you want to include toppings, drop a few additional blueberries or a sprinkle of granola in each mold before filling.

          Insert Sticks: If your molds come with sticks, insert them according to the manufacturer's instructions.

            Freeze: Place the filled molds in the freezer and let them freeze for at least 4-6 hours or until solid. For best results, overnight freezing is recommended.

              Unmold and Serve: To easily release the pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out and enjoy immediately! You can also dip them in melted dark chocolate and roll them in crushed nuts or granola for an extra treat.

                Storage: Store any leftover pops in an airtight container or wrap them in plastic wrap in the freezer for up to 2 weeks.
