Frozen Banana Oat Sandwich Bars

2 ripe bananas

2 cups rolled oats

1/4 cup creamy peanut butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 cup dark chocolate chips (optional)

1/4 cup chopped nuts or seeds (optional)

Fresh banana slices for layering

Instructions
 

Prepare the Banana Mixture: In a mixing bowl, mash the ripe bananas with a fork until smooth. Then, add in the peanut butter, honey (or maple syrup), vanilla extract, and cinnamon. Mix until thoroughly combined.

    Add Oats: Stir in the rolled oats, ensuring they are evenly coated with the banana mixture. If you’re using chocolate chips or nuts/seeds, fold them in now.

      Line the Baking Dish: Line a 9x9 inch (or equivalent) baking dish with parchment paper, leaving some overhang for easy removal later.

        Layer the Sandwich Bars: Spread half of the oat mixture evenly in the bottom of the prepared baking dish. Layer fresh banana slices on top, and then spread the remaining oat mixture over the banana layer, pressing down gently to compact it all together.

          Freeze: Cover the dish with plastic wrap or foil and place it in the freezer for at least 2 hours, or until firm.

            Cut and Serve: Once frozen, remove the bars from the baking dish using the parchment overhang. Cut into rectangular sandwich-sized bars. If serving immediately, allow them to sit at room temperature for a few minutes to soften slightly for easier biting.

              Store: Place any leftover bars in an airtight container and keep them in the freezer for up to 2 months. Enjoy them straight from the freezer or let them thaw for a few minutes before eating.
