Frozen Banana Chocolate Chip Muffins

2 ripe bananas (mashed)

1/2 cup plain yogurt (or Greek yogurt)

1/3 cup honey or maple syrup

1/4 cup melted coconut oil (or vegetable oil)

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour (or whole wheat flour)

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon ground cinnamon (optional)

3/4 cup semi-sweet chocolate chips

1/2 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it with non-stick spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, yogurt, honey (or maple syrup), melted coconut oil, eggs, and vanilla extract. Whisk until smooth and well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using). Make sure to break up any lumps.

        Combine Both Mixtures: Slowly add the dry ingredients to the wet mixture, stirring gently with a spatula until just combined. Be careful not to overmix. The batter should be slightly lumpy.

          Fold in Chocolate Chips & Nuts: Gently fold in the chocolate chips and chopped nuts until evenly distributed throughout the batter.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tins, filling each cup about two-thirds full.

              Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                Cool: Once baked, remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
