Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper, diced (any color)

1 can (15 oz) diced tomatoes

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

2 cups beef or vegetable broth

2 tbsp chili powder

1 tsp cumin

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

3 cups elbow macaroni (uncooked)

2 cups shredded cheddar cheese

Fresh cilantro or parsley for garnish (optional)

Instructions
 

In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain any excess fat.

    Add the diced onion, minced garlic, and bell pepper to the skillet and sauté for about 5 minutes until the vegetables are softened.

      Transfer the meat and vegetable mixture to the crockpot.

        Stir in the diced tomatoes, kidney beans, black beans, beef (or vegetable) broth, chili powder, cumin, paprika, salt, and black pepper until well combined.

          Cover the crockpot and cook on low for 6 hours, or on high for 3 hours.

            After the cooking time, add the uncooked elbow macaroni to the crockpot, stirring gently. Cover again and cook on high for an additional 30 minutes, or until the pasta is tender.

              Once the pasta is cooked to your liking, stir in the shredded cheddar cheese until melted and creamy.

                Serve hot, garnishing with fresh cilantro or parsley if desired. Enjoy your cozy bowl of chili mac!
