2 cups cooked jasmine rice (preferably day-old)

1 lb shrimp, peeled and deveined

1 cup mixed vegetables (carrots, peas, bell peppers, diced)

3 green onions, chopped

3 cloves garlic, minced

2 large eggs

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

2 tablespoons vegetable oil

Salt and pepper to taste

Cilantro leaves for garnish (optional)

Prepare the Shrimp: In a bowl, season the shrimp with a pinch of salt and pepper. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Remove them from the skillet and set aside.

    Scramble the Eggs: In the same skillet, add another tablespoon of vegetable oil. Beat the eggs and pour them into the skillet, scrambling until just set. Remove the scrambled eggs and set aside with the shrimp.

      Sauté Vegetables: In the same skillet, add one tablespoon of sesame oil. Toss in the minced garlic and sauté for about 30 seconds until fragrant. Add the mixed vegetables and stir-fry for about 3-4 minutes until they are tender-crisp.

        Combine Ingredients: Add the cooked rice to the skillet with the vegetables, mixing well to combine. Break apart any clumps of rice. Stir in the soy sauce and oyster sauce (if using), mixing everything thoroughly.

          Return Shrimp and Eggs: Add the cooked shrimp and scrambled eggs back into the skillet. Gently fold everything together until evenly distributed and heated through.

            Finish and Serve: Stir in the chopped green onions, adjusting seasoning with more soy sauce, salt, or pepper if desired. Remove from heat and garnish with fresh cilantro leaves if using. Serve hot and enjoy!
