1 pound shrimp, peeled and deveined

3 cups cooked rice (preferably day-old or leftover)

2 tablespoons vegetable oil

2 large eggs, lightly beaten

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Prepare the Ingredients: Make sure your shrimp are peeled and deveined. If using day-old rice, break up any clumps with a fork. Chop the vegetables and green onions, and mince the garlic.

    Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

      Cook the Shrimp: Add shrimp to the pan and cook for 2-3 minutes until they turn pink and opaque. Remove them from the skillet and set aside.

        Scramble the Eggs: In the same pan, add the remaining tablespoon of oil. Pour in the beaten eggs and scramble until just set. Transfer the scrambled eggs to the plate with the shrimp.
