12 oz penne pasta

1 cup fig jam

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup baby spinach, chopped

1 cup cherry tomatoes, halved

2 cloves garlic, minced

1/2 tsp red pepper flakes (optional)

1 tsp dried Italian herbs (or 2 tsp fresh herbs)

Salt and pepper to taste

Olive oil for drizzling

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain and set aside.

      Prepare the Mixture: In a large mixing bowl, combine the fig jam, ricotta cheese, half of the mozzarella cheese, baby spinach, cherry tomatoes, garlic, red pepper flakes (if using), Italian herbs, salt, and pepper. Stir until well-blended.

        Combine Pasta and Mixture: Add the cooked pasta to the bowl with the cheese and fig mixture. Toss everything together gently until the pasta is evenly coated.
