2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

2 cans (14 oz each) diced tomatoes (preferably fire-roasted)

1 cup vegetable broth

1 teaspoon sugar (to balance acidity)

1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)

½ cup heavy cream (or coconut cream for a vegan option)

Salt and pepper to taste

Fresh basil leaves for garnish

For the Grilled Cheese:

4 slices of bread (sourdough or whole grain recommended)

4 slices of cheese (cheddar, mozzarella, or your favorite melty cheese)

2 tablespoons butter (or mayonnaise for an alternate method)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until softened. Stir in the minced garlic and cook for another minute until fragrant.

    Add Tomatoes & Broth: Pour in the canned tomatoes (with their juices) and vegetable broth. Stir in the sugar and dried basil. Bring to a simmer and let it cook uncovered for about 15 minutes, allowing the flavors to meld together.

      Blend the Soup: Use an immersion blender to puree the soup until smooth. If you don't have one, carefully transfer the soup in batches to a regular blender. Return the soup to the pot.

        Add Cream & Season: Lower the heat and stir in the heavy cream. Season with salt and pepper to taste. Let the soup warm through for another 5 minutes, stirring occasionally. If using fresh basil, stir it in just before serving.

          Prepare the Grilled Cheese: While the soup is simmering, heat a skillet over medium heat. Butter one side of each slice of bread. Place two slices (butter side down) in the skillet and top each with a slice of cheese. Then, cover with the other slices of bread (butter side up).

            Grill to Perfection: Cook for about 3-4 minutes or until the bottoms are golden brown. Carefully flip the sandwiches and cook for another 3-4 minutes until the cheese is melted and the other side is also golden. Add more butter if necessary for browning.
