2 cups cooked chicken, shredded

1 cup green enchilada sauce

1 cup cheese (cheddar or Monterey Jack), shredded

8 small corn tortillas

1/2 cup onion, finely chopped

1/4 cup fresh cilantro, chopped (plus extra for garnish)

1/2 teaspoon cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

1 tablespoon olive oil

Sliced jalapeños (optional, for garnish)

Sour cream (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Filling: In a large bowl, combine the shredded chicken, 1/2 cup of the green enchilada sauce, 1/2 cup cheese, chopped onions, cilantro, cumin, garlic powder, salt, and pepper. Mix until well combined.

      Warm the Tortillas: To make rolling easier, warm the corn tortillas. You can do this by placing them in a microwave for about 20-30 seconds, or by briefly heating them on a skillet until soft.
