Easy Cheesy Vegetable Quesadillas for Dinner

4 large flour tortillas

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup spinach leaves, chopped

1 cup bell peppers, diced (mix of red and green)

1/2 cup red onion, thinly sliced

1 cup corn kernels (fresh or frozen)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

Salsa or guacamole, for serving

Instructions
 

Prepare the Vegetable Mixture:

    In a large mixing bowl, combine the chopped spinach, diced bell peppers, sliced red onion, corn, garlic powder, cumin, salt, and pepper. Mix well until all the vegetables are evenly seasoned.

      Heat the Olive Oil:

        In a skillet over medium heat, add the olive oil. Once hot, add the vegetable mixture and sauté for about 5-7 minutes, or until the veggies are soft and the flavors meld together. Remove from heat and set aside.

          Assemble the Quesadillas:

            Lay one flour tortilla flat on a clean surface. Sprinkle a generous amount of cheddar and mozzarella cheese evenly over half of the tortilla. Top with a portion of the sautéed vegetable mixture, then add another layer of cheese on top of the veggies. Fold the tortilla in half to cover the filling.

              Cook the Quesadillas:

                In the same skillet over medium heat (add a little more olive oil if necessary), place the folded quesadilla in the pan. Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese has melted. Repeat with remaining tortillas and filling.

                  Slice and Serve:

                    Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut them into wedges and serve warm with salsa or guacamole on the side.
