1 lb beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

8 oz mushrooms, sliced

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper, to taste

8 oz egg noodles

Fresh parsley, for garnish

Cook the Egg Noodles: In a large pot of boiling salted water, add the egg noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the sliced beef and season with salt and pepper. Sauté for about 3-5 minutes, or until the beef is browned but not fully cooked. Remove the beef from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion and minced garlic. Sauté for 2-3 minutes until the onions are translucent. Add the sliced mushrooms and cook for an additional 4-5 minutes until they are tender.

        Create the Sauce: Pour the beef broth, Worcestershire sauce, and Dijon mustard into the skillet, stirring to combine. Bring to a simmer, allowing the mixture to cook for about 5 minutes until slightly thickened.

          Finish with Sour Cream: Lower the heat to medium-low and stir in the sour cream. Once incorporated, return the cooked beef to the skillet, stirring gently to coat the meat in the sauce. Let everything simmer for another 2-3 minutes until the beef is cooked through.
