Ingredients

2 cups puffed rice cereal

1 cup creamy peanut butter

1/2 cup honey or maple syrup

1/2 cup dark chocolate chips

1/4 cup chopped nuts (such as almonds or walnuts)

1/4 cup dried fruit (such as cranberries or raisins)

1 teaspoon vanilla extract

A pinch of salt

Instructions

Prepare the Baking Dish: Line an 8x8 inch (or similar size) baking dish with parchment paper, allowing the paper to hang over the edges for easy removal later. Spray lightly with cooking spray for added non-stick.

Melt the Peanut Butter and Sweetener: In a medium saucepan over low heat, combine the creamy peanut butter and honey (or maple syrup). Stir continuously until the mixture is smooth and well combined. This should take about 2-3 minutes.

Add Flavorings: Remove from heat and stir in the vanilla extract and a pinch of salt. Mix well to incorporate.

Combine Dry Ingredients: In a large mixing bowl, add the puffed rice cereal, chopped nuts, and dried fruit. Pour the warm peanut butter mixture over the dry ingredients.

Mix Thoroughly: Using a spatula or wooden spoon, mix everything together until the puffed rice cereal is evenly coated with the peanut butter mixture.

Spread into the Dish: Transfer the mixture to the prepared baking dish. Using your hands (lightly dampened to prevent sticking) or the back of a spatula, press the mixture down firmly and evenly into the dish.

Melt the chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring in between, until fully melted and smooth.

Drizzle Chocolate: Pour the melted chocolate over the pressed rice mixture and spread it evenly with a spatula.

Chill: Place the baking dish in the refrigerator for at least 1-2 hours, or until firm.

Cut and Serve: Once set, lift the bars out of the dish using the parchment paper. Cut into squares or rectangles. Enjoy your crunchy peanut butter rice bars!
