One of my go-to recipes that perfectly captures the essence of spring and summer is the Crunchy Nacho Chickpea Salad. Crunchy Nacho Chickpea Salad

This colorful and refreshing dish combines protein-packed chickpeas, vibrant vegetables, creamy avocado, and crunchy tortilla chips for a delightful twist on a classic favorite. Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh, frozen, or canned)

1 small red onion, finely chopped

1 red bell pepper, diced

1 avocado, diced

1 cup shredded sharp cheddar cheese (or a dairy-free alternative)

1 cup corn tortilla chips, roughly crushed

1/4 cup fresh cilantro, chopped

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Juice of 1 lime

3 tablespoons olive oil

Salt and pepper, to taste

Instructions
 

In a large mixing bowl, combine the chickpeas, cherry tomatoes, corn, red onion, red bell pepper, and avocado.

    In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, garlic powder, salt, and pepper until well combined. Adjust seasoning to taste.

      Pour the dressing over the chickpea mixture and toss gently until everything is evenly coated.

        Add in the shredded cheddar cheese and gently fold it into the salad.

          Right before serving, sprinkle the crushed tortilla chips and cilantro over the top for extra crunch and freshness.

            Serve immediately in a large bowl or individual servings, garnishing with additional lime wedges if desired.
