1 medium sweet potato

1 medium beet

1 medium zucchini

1 medium carrot

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon paprika

½ teaspoon sea salt

¼ teaspoon black pepper

Optional: fresh herbs (like rosemary or thyme) for garnish

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper for easy cleanup.

    Prepare the Vegetables: Wash and peel the sweet potato and beet. Using a mandoline slicer or a sharp knife, slice all the vegetables into thin, even rounds (about 1/8 inch thick). This ensures they cook evenly and become crispy.

      Toss in Seasoning: In a large mixing bowl, combine the sliced veggies with olive oil, garlic powder, paprika, sea salt, and black pepper. Toss well until the veggies are evenly coated with the oil and spices.

        Arrange on Baking Sheets: Spread the veggie slices in a single layer on the prepared baking sheets. Be sure not to overlap them, as this can cause them to steam instead of crisping up.
