Ingredients

1 lb ground beef (or ground turkey)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup ketchup

¼ cup Worcestershire sauce

2 tbsp brown sugar

1 tbsp yellow mustard

1 tsp chili powder

1 tsp paprika

Salt and pepper to taste

1 bag (10-12 oz) tortilla chips

2 cups shredded cheddar cheese (or a blend of cheeses)

1 cup diced tomatoes (fresh or canned, drained)

½ cup sliced black olives

½ cup green onions, chopped

1 jalapeño, sliced (optional)

Sour cream and salsa for serving

Instructions

Brown the Meat: In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain excess fat.

Sauté Aromatics: Add the chopped onion and minced garlic to the pan, cooking until the onions are translucent (about 3-4 minutes).

Mix the Sauce: In a large bowl, combine ketchup, Worcestershire sauce, brown sugar, yellow mustard, chili powder, paprika, salt, and pepper. Stir well to blend.

Combine in Crockpot: Pour the sauce mixture over the cooked meat and onion in the skillet, mixing until the meat is evenly coated. Transfer this mixture to a crockpot.

Slow Cook: Set the crockpot on low for 4 hours or on high for 2 hours, allowing the flavors to meld and the sauce to thicken.

Prepare Nachos: At the end of the cooking time, preheat your oven to 350°F (175°C). On a large baking sheet, spread out the tortilla chips in an even layer.

Assemble Nachos: Spoon the Sloppy Joe mixture evenly over the chips, then sprinkle with shredded cheese and diced tomatoes.

Bake: Place in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.

Garnish: Remove from the oven and top with sliced black olives, green onions, and jalapeños if desired.

Serve: Serve hot with dollops of sour cream and sides of salsa.
