Crockpot Potato Soup Cheddar Chives

6 medium russet potatoes, peeled and diced

1 medium yellow onion, chopped

3 cloves garlic, minced

4 cups vegetable broth (or chicken broth for a non-vegetarian version)

1 cup heavy cream (or half-and-half for a lighter option)

2 cups sharp cheddar cheese, shredded

1/2 cup fresh chives, chopped (plus extra for garnish)

1 teaspoon dried thyme

1 teaspoon salt (to taste)

1/2 teaspoon black pepper (to taste)

1 tablespoon olive oil

1 tablespoon butter

Prepare the Ingredients: Start by peeling and dicing the potatoes into small, uniform pieces to ensure even cooking. Chop the onion and mince the garlic.

    Sauté Aromatics: In a skillet over medium heat, heat the olive oil and butter. Add the chopped onion and minced garlic, stirring occasionally, until the onion becomes translucent (about 4-5 minutes). This adds a depth of flavor to the soup.

      Layer in the Crockpot: Transfer the sautéed onion and garlic mixture to the crockpot. Add the diced potatoes, vegetable or chicken broth, dried thyme, salt, and black pepper.

        Cook: Cover the crockpot and set it to cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender.

          Blend for Creaminess: Once the potatoes are cooked through, use an immersion blender to puree the mixture until smooth. If you prefer a chunky soup, only blend half of it and stir back into the pot.

            Add Cream and Cheese: Stir in the heavy cream and shredded sharp cheddar cheese. Mix well until the cheese is fully melted and incorporated. Adjust seasoning with more salt and pepper if needed.

              Finish with Chives: Mix in the chopped fresh chives, reserving a little for garnish. Let the soup cook on low for an additional 10-15 minutes to heat through.

                Serve: Ladle the creamy potato soup into bowls, garnishing with additional chopped chives and extra cheese if desired. Serve hot with crusty bread for a complete meal.
