Crockpot Chili with Hatch & Beans

2 cups fresh Hatch green chiles, roasted and chopped (or jarred if not in season)

1 lb ground beef (or turkey for a lighter option)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (28 oz) diced tomatoes (with juices)

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon oregano

Salt and pepper to taste

1 cup beef or vegetable broth (for a vegetarian option)

Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions
 

Prep the Hatch Chiles: If using fresh Hatch chiles, roast them over an open flame or in an oven until charred, then let them cool before peeling and chopping.

    Sauté the Aromatics: In a skillet over medium heat, add olive oil. Sauté diced onions until translucent (about 5 minutes), then add minced garlic for an additional minute. Remove from heat.

      Brown the Meat: In the same skillet, add the ground beef or turkey and cook until browned. Season with salt, pepper, chili powder, cumin, smoked paprika, and oregano. Drain excess fat if necessary.

        Combine in the Crockpot: In a large crockpot, combine the sautéed onion and garlic, browned meat, roasted Hatch chiles, black beans, kidney beans, and diced tomatoes. Stir well to combine everything evenly.

          Add Liquid: Pour in the beef or vegetable broth to help with the cooking process and to achieve a chili-like consistency.

            Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the flavors meld together and the chili thickens.

              Taste & Adjust Seasoning: Before serving, taste the chili and adjust seasonings as necessary. This is the time to add more salt, pepper, or spices to suit your palate.
