Ingredients

2 pounds boneless, skinless chicken thighs

4 cups low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, chopped

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1 cup frozen peas

1 can (10.5 oz) cream of chicken soup

1 package (8 oz) biscuit dough (like Grands!)

Fresh parsley for garnish (optional)

Instructions

Prepare the Chicken: Start by placing the boneless, skinless chicken thighs at the bottom of the crockpot. This will be the base of your dish.

Add Vegetables: Layer the diced onion, minced garlic, sliced carrots, and chopped celery over the chicken. These will provide delightful flavors as they cook.

Season It Up: Sprinkle the dried thyme, rosemary, paprika, pepper, and salt evenly over the vegetables and chicken.

Pour the Broth and Soup: Add the chicken broth and the can of cream of chicken soup into the crockpot. Stir gently to combine all the ingredients without disturbing the chicken too much.

Cook Low and Slow: Cover the crockpot and set it to low for 6-7 hours or high for 3-4 hours, depending on your schedule. The chicken will become tender and infuse the broth with flavors.

Shred the Chicken: About 30 minutes before serving, use two forks to shred the chicken directly in the crockpot. Stir to incorporate it back into the soup.

Make the Dumplings: Open the package of biscuit dough and cut each biscuit in half or quarters (depending on your preferred dumpling size). Add the pieces directly to the crockpot, gently folding them into the mixture.

Finish Cooking: Cover the crockpot and allow the dumplings to cook on high for another 30-40 minutes until they are fluffy and cooked through. Avoid lifting the lid frequently to ensure they cook properly.

Add Peas: Stir in the frozen peas right before serving. Allow them to heat through for about 5 minutes.

Serve and Garnish: Ladle the chicken and dumplings into bowls, garnish with chopped fresh parsley if desired, and enjoy the warmth of this comforting dish!
