1 pound large shrimp, peeled and deveined

1 pound smoked sausage (Andouille or your choice), sliced into rounds

1 cup long-grain white rice, rinsed

1 medium onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juice)

4 cups low-sodium chicken broth

2 tablespoons Cajun seasoning

1 teaspoon paprika

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (adjust for spice preference)

2 tablespoons olive oil

Fresh parsley or green onions, for garnish

Prep Your Ingredients: Gather all your ingredients. Make sure shrimp are peeled and deveined, and the sausage is sliced into rounds. Dice onion and bell peppers, and mince the garlic.

    Sauté the Veggies: In a skillet over medium heat, add olive oil. Once hot, add diced onion, and sauté for 4-5 minutes until translucent. Then add the diced red and green bell peppers and minced garlic. Cook for another 2-3 minutes until fragrant.
