4 cups watermelon, seedless and diced into small cubes

1 cup granulated sugar, divided

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon cornstarch

1 cup all-purpose flour

1/2 cup rolled oats

1/4 cup brown sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup milk

1 teaspoon almond extract (optional)

Vanilla ice cream (for serving)

Prepare the Watermelon: Begin by placing the diced watermelon in a large bowl. Add 1/2 cup of granulated sugar, lemon juice, vanilla extract, cinnamon, and cornstarch. Toss gently to combine and let it sit for about 15 minutes to allow the juices to mix.

    Preheat Oven: Preheat your oven to 350°F (175°C).
