Ingredients

2 lbs baby Yukon Gold potatoes, halved

1/4 cup olive oil

6 cloves garlic, minced

2 teaspoons fresh rosemary, chopped (or 1 tsp dried)

2 teaspoons smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped for garnish

Zest of 1 lemon (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature is key for crispy potatoes.

Prepare the Potato Mixture: In a large mixing bowl, combine the halved baby Yukon Gold potatoes, olive oil, minced garlic, chopped rosemary, smoked paprika, salt, and black pepper. Toss everything together until all the potatoes are well coated.

Arrange on Baking Sheet: Spread the seasoned potatoes in a single layer on a large baking sheet. Make sure the cut side is facing down for maximum crispiness.

Roasting Time: Place the baking sheet in the preheated oven and roast for 30-35 minutes. Halfway through the cooking time, give the potatoes a good toss or flip them with a spatula to ensure even crisping.

Check for Doneness: Once the potatoes are golden brown and crispy on the outside, they should be fork-tender on the inside. If necessary, you can roast them for an additional 5-10 minutes for extra crispiness.

Garnish and Serve: Remove them from the oven and transfer the crispy potatoes to a serving dish. Garnish with chopped fresh parsley and lemon zest for a bright finish.

Enjoy: Serve immediately while hot and crispy as a side dish or a tasty snack!
