Crispy Garlic Parmesan Fries

4 large russet potatoes

1/4 cup olive oil

4 cloves of garlic, minced

1 tsp sea salt

1/2 tsp black pepper

1/2 tsp smoked paprika

1/2 cup freshly grated Parmesan cheese

2 tbsp fresh parsley, chopped

Optional: additional sea salt for topping

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    Prepare the Potatoes: Wash and peel the russet potatoes. Cut them into thin, even strips (about 1/4 inch thick) to ensure they cook uniformly.

      Soak the Fries: Place the cut potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch (this helps to make them crispier).

        Season the Potatoes: After soaking, drain the potatoes and pat them dry with a clean kitchen towel. In a large bowl, toss the dried potato strips with olive oil, minced garlic, sea salt, black pepper, and smoked paprika until evenly coated.

          Bake the Fries: Spread the potato strips out in a single layer on the prepared baking sheet, ensuring they are not overcrowded. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

            Add Parmesan and Parsley: Once the fries are done baking, remove them from the oven. Immediately sprinkle the hot fries with the grated Parmesan cheese and chopped parsley while they are still hot. Gently toss to coat.

              Serve and Enjoy: Transfer the crispy garlic Parmesan fries to a serving platter. Optionally, top with a pinch of sea salt for extra flavor. Serve immediately with your favorite dipping sauce!
