Crispy Charcuterie Tacos

6 small corn tortillas

1 cup shredded sharp cheddar cheese

1 cup salami, sliced into strips

1 cup prosciutto, torn into pieces

½ cup pepperoncini, sliced

½ cup olives (green or black), sliced

1 avocado, diced

¼ cup fresh parsley, chopped

½ cup sour cream

2 tsp lime juice

1 tsp smoked paprika

Olive oil (for frying)

Salt and pepper to taste

Instructions
 

Prep the tortillas: Heat a skillet over medium heat and add a splash of olive oil. Once hot, lightly fry the corn tortillas for about 30 seconds on each side until they are pliable. Set aside.

    Make cheesy taco shells: In the same skillet, sprinkle a thin layer of shredded cheddar cheese into a circle, about the size of the tortilla. Allow it to melt and bubble for about 2-3 minutes until it's crispy and golden. Carefully slide a fried tortilla onto the cheese and press down gently. Let it cook for another minute before flipping and cooking the other side, allowing the cheese to adhere. Repeat with the remaining tortillas and cheese to create 6 cheesy taco shells.

      Prepare the filling: In a large bowl, combine the salami, prosciutto, pepperoncini, olives, diced avocado, and chopped parsley. Toss lightly to mix everything together. Season with salt, pepper, and smoked paprika.

        Assemble the tacos: Carefully remove the cheesy taco (shell) from the skillet and place it on a platter. Fill each crispy taco shell generously with the charcuterie filling.

          Make the sauce: In a small bowl, mix sour cream with lime juice, salt, and a pinch of smoked paprika. Stir well until smooth.

            Serve: Drizzle the sour cream sauce over each taco and garnish with extra parsley if desired. Serve immediately while warm and crispy, with additional lime wedges on the side.
