Ingredients

2 cups shredded cooked chicken (about 2 chicken breasts)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/2 cup salsa (your choice of mild or spicy)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cumin

1/2 tsp chili powder

Salt and pepper, to taste

12 small flour tortillas (or corn, if preferred)

Cooking spray or olive oil

Fresh cilantro, diced (for garnish, optional)

Sour cream or guacamole (for serving, optional)

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, mozzarella cheese, cream cheese, salsa, garlic powder, onion powder, cumin, chili powder, salt, and pepper. Mix well until everything is thoroughly incorporated.

Assemble Taquitos: Warm the tortillas in the microwave for about 30 seconds to make them pliable. Take one tortilla and spoon about 2-3 tablespoons of the chicken filling onto the center. Tightly roll the tortilla around the filling, securing it as you go. Repeat this step with the remaining tortillas and filling.

Arrange on Baking Sheet: Place the rolled taquitos seam side down on the prepared baking sheet. Spray the tops lightly with cooking spray or brush with olive oil for a crispier texture.

Bake: Bake in the preheated oven for 15-20 minutes, or until the taquitos are golden brown and crispy, turning them halfway through for even cooking.

Serve: Remove from the oven and let them cool for a few minutes. Garnish with fresh cilantro if desired. Serve with sour cream or guacamole for dipping. Enjoy your delightful crunchy treats!
