Creamy White Bean and Turkey Soup

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 pound ground turkey

4 cups low-sodium chicken broth

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

2 cups fresh spinach or kale, roughly chopped

Fresh parsley for garnish (optional)

Lemon wedges for serving (optional)

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and diced celery. Sauté for about 5-7 minutes, stirring occasionally, until the vegetables start to soften. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Turkey: Add the ground turkey to the pot. Break it apart with a spoon and cook until browned and cooked through, about 6-8 minutes. Season with salt, pepper, thyme, and rosemary.

      Add the Broth and Beans: Once the turkey is cooked, pour in the chicken broth and add the white beans. Stir well to combine. Bring the soup to a gentle simmer and let cook for about 15 minutes, allowing the flavors to meld.

        Incorporate the Cream: After simmering, reduce the heat to low and stir in the heavy cream. Allow the soup to gently heat through for about 5 minutes, being careful not to bring it to a boil as this may curdle the cream.

          Add Greens: Just before serving, stir in the chopped spinach or kale. Allow it to wilt for a few minutes in the hot soup.

            Taste and Adjust: Taste the soup and adjust the seasoning with more salt and pepper if needed.

              Serve: Ladle the soup into bowls and garnish with fresh parsley if desired. Serve with lemon wedges on the side for a bright zing!
