Creamy Tomato Basil Tortellini Soup

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (28 ounces) crushed tomatoes

3 cups vegetable broth (or chicken broth)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1 package (9 ounces) cheese tortellini (fresh or frozen)

1 cup heavy cream

1 cup fresh basil leaves, chopped

Grated Parmesan cheese, for serving

Optional: crushed red pepper flakes, for a spicy kick

Instructions
 

Sauté the Aromatics: In a large pot over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for another minute until fragrant.

    Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Stir in the dried oregano and basil. Season with salt and pepper to taste. Bring the mixture to a simmer and let it cook for about 10 minutes to allow the flavors to meld.
