Creamy Tomato Basil Soup with Grilled Cheese

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 (14-ounce) cans of diced tomatoes (preferably fire-roasted)

1 teaspoon sugar

3 cups vegetable broth (or chicken broth)

1 cup heavy cream (or coconut cream for a dairy-free option)

1 cup fresh basil leaves, chopped

Salt and pepper to taste

8 slices of bread (your choice, but sourdough works beautifully)

4 tablespoons butter

8 slices of cheese (cheddar, mozzarella, or a blend)

Instructions
 

Sauté the Aromatics: In a large pot over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and cook for another minute, until fragrant.

    Add Tomatoes and Sugar: Pour in the canned diced tomatoes along with their juices. Sprinkle in the sugar (this helps balance the acidity of the tomatoes) and stir well.

      Simmer: Pour in the vegetable broth and bring the mixture to a simmer. Reduce the heat to low and let it cook uncovered for about 20 minutes, allowing the flavors to meld.

        Blend the Soup: Remove the soup from heat. Using an immersion blender, carefully blend until smooth. If you don’t have an immersion blender, transfer the soup in batches to a countertop blender. (Be cautious with hot liquids!)

          Add Cream and Basil: Stir in the heavy cream and chopped basil. Season with salt and pepper to taste. Warm through for an additional 5 minutes without boiling.

            Prepare the Grilled Cheese: While the soup is warming, start on the grilled cheese sandwiches. Heat a non-stick skillet over medium heat. Spread butter on one side of each slice of bread. Place half of the bread slices buttered-side-down onto the skillet.

              Layer the Cheese: On each slice in the skillet, add a layer of cheese, then top with another slice of bread, buttered-side-up. Cook for about 3-4 minutes until golden brown, then carefully flip and cook the other side until the cheese is melted and bread is golden.

                Serve: Once the sandwiches are done, cut them into triangles and serve alongside bowls of the creamy tomato basil soup. Garnish with extra basil leaves if desired.
