As the days get longer and warmer, I find myself gravitating towards lighter, fresher dishes that celebrate the bounty of seasonal produce. One of my all-time favorite recipes that perfectly captures this essence is Colorful Creamy Pasta Primavera. Not only is it a feast for the eyes with its rainbow of vegetables, but it also delivers a comforting creaminess that warms the soul.

Creamy Pasta Primavera

Spring is the perfect time to enjoy vibrant, fresh flavors, and Colorful Creamy Pasta Primavera captures that essence beautifully. This delightful dish features farfalle pasta tossed with an array of seasonal vegetables like bell peppers, zucchini, and asparagus, all enveloped in a rich, creamy sauce. Ingredients
  

12 oz farfalle pasta (or your pasta of choice)

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers (red, yellow, green), sliced

1 zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

1 cup broccoli florets

1 cup asparagus, cut into 2-inch pieces

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

1 teaspoon Italian seasoning

Fresh basil leaves, for garnish

Optional: Red pepper flakes for spice

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the farfalle pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for another 30 seconds, or until fragrant.

      Add the Veggies: Add the sliced bell peppers, zucchini, cherry tomatoes, broccoli florets, and asparagus to the skillet. Season with salt, pepper, and Italian seasoning. Sauté the vegetables until they are tender but still vibrant, approximately 5-7 minutes.

        Make the Creamy Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Gradually add the grated Parmesan cheese, stirring until melted and the sauce is silky. If the sauce is too thick, add the reserved pasta water a little at a time until you reach the desired consistency.

          Combine Pasta with Sauce: Add the cooked pasta to the skillet and gently toss everything together until the pasta is well-coated with the creamy sauce and combined with the vegetables. Cook for another 2-3 minutes to warm everything through.

            Garnish and Serve: Remove from heat, garnish with fresh basil leaves and an optional sprinkle of red pepper flakes for a kick. Serve immediately and enjoy your delicious Creamy Pasta Primavera!
