Creamy Herb Chicken Rice Bowls

2 cups cooked jasmine rice

1 lb chicken breast, diced

2 cups spinach, fresh

1 cup cherry tomatoes, halved

1 cup heavy cream

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Rice: If not already done, rinse and cook the jasmine rice according to package instructions. Set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and season with salt, pepper, thyme, and basil. Cook for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.

        Add Vegetables: Add the fresh spinach and halved cherry tomatoes to the skillet. Stir until the spinach wilts and the tomatoes soften, about 2-3 minutes.

          Combine Ingredients: Return the cooked chicken to the skillet and mix well to coat the chicken in the creamy herb sauce. Stir in the grated Parmesan cheese until melted and well incorporated. Taste and adjust seasoning if necessary.
