Ingredients
  

1 cup sweet corn kernels (fresh or frozen)

1 ripe avocado

2 tablespoons cream cheese (or vegan cream cheese)

1 tablespoon lime juice

1 clove garlic, minced

¼ teaspoon paprika

Salt and pepper to taste

2 slices of whole-grain bread (or bread of your choice)

Fresh cilantro or parsley, for garnish

Optional: red pepper flakes for a kick

Prepare the Corn: If using fresh corn, grill or boil the corn until tender, then cut the kernels off the cob. If using frozen corn, thaw it and drain any excess water.

    Make the Creamy Mixture: In a bowl, combine the corn kernels, cream cheese, lime juice, minced garlic, paprika, salt, and pepper. Use a fork to mash the mixture slightly until it's creamy but still has some whole corn kernels for texture. Adjust seasoning if necessary.
