Creamy Chicken & Corn Chowder

4 cups chicken broth

2 cups fresh or frozen corn kernels

2 medium potatoes, peeled and diced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

1 cup heavy cream

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons fresh parsley, chopped (for garnish)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic, carrot, and celery, cooking for an additional 5 minutes until everything is fragrant and tender.

    Add Chicken and Broth: Stir in the shredded chicken, chicken broth, corn, and diced potatoes. Season with thyme, oregano, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low.
